It is one of the most expensive tea varieties in the world - not surprisingly, its production method is very strict. White tea grows on the mountain slopes of the Fujian province in China. It is made from young leaves that are hand-picked in late March or early April. They are only harvested on two days of the year, when the leaf buds are just budding, and only in the morning when the sun adequately illuminates the plantation. After harvesting, the young tea leaves undergo a gentle oxidation process, during which they take on their bright colour and unique qualities. The infusion made from white tea is characterised by a mild, pleasant flavour with slightly sweet notes.
